What To Do With Holiday Leftovers!

Tis' the season for endless heaps of mashed potatoes, boats of gravy and perfectly cooked turkey or ham awaiting you at the holiday table. Delicious meals and hearty side dishes that only come around this time of year are unquestionably one of the best parts of the season.
It's the special time of year when you can take time to enjoy good company with even better food. With all that food however, comes lots of leftovers!
So, to help you use all those delicious only-comes-once-a-year dishes that are staring at you from the fridge, we’ve put together 3 healthy recipes you can make with your holiday leftovers.
Cranberry Oatmeal
Oatmeal is the perfect way to start your day- and a great way to add some flavor is with a little help from one of the season's favorite sauces: cranberry sauce. Add in a spoonful with sprinkle of cinnamon, and any other desired toppings like shaved almonds. This warm breakfast is packed with healthy whole grains that will keep you feeling satisfied until lunch time plus, cinnamon is loaded with antioxidants and almonds are great good-for-you fats.
Pumpkin Smoothie
Is there anything that screams holidays more than homemade pumpkin pie?! Once you've capped your cravings for dessert, try incorporating that leftover pumpkin filling into a smoothie instead. Combine a vanilla protein powder, pumpkin puree, cinnamon, nutmeg, a touch of maple syrup, banana and ice. This rich smoothie is so delicious and is packed with antioxidants and protein- so you feel like you’re still indulging in that pumpkin pie but will be reaping lots of health benefits.
Frittata or Omelet
When in doubt, egg it out! Mix in any of your leftovers with eggs and stick it all in the oven to make a frittata you can indulge in any time of the day. If you prefer an omelet, simply fry up your eggs in a pan over the stovetop and throw it those holiday extras.
Have extra ham turkey, roasted veggies, you name it? Just about anything goes when making eggs. Eggs are also high in protein and a great source of energy for that post-holiday slump.
